Nonstick

A lot of people would define nonstick purely as PTFE (aka Teflon and its cousins) and silicon (the heir-apparent to the nonstick throne).

However, we're adding cast iron and carbon steel into the mix. They're not always nonstick out of the box, but you can get em really, really slick with just a tiny amount of effort and they're almost certainly safer from a chemical perspective.

This category of cookware have a bad reputation in terms of upkeep and maintenance. Here's a couple generic tips to keep your cookware like new:

Don't stack your PTFE/silicon pans under other pans. The coatings will rub off or scratch super easily and once that happens, they're unsafe to cook with. Ideally, hang them to avoid the issue altogether.

You can totally wash your cast iron with soap! It's not like the old days when soap had lye in it. They don't need to be babied anymore. Just wash them like any other pan, then to save time on drying, just throw em on the stove so the water can evaporate off of them. If the seasoning is looking spotty, wipe down with a *tiny* bit of oil while still hot, then allow to cool before putting away. Easy peasy.

Use your PTFE/silicon as little as possible (they wear out quickly with use) and your cast iron/carbon steel as often as possible (they get better with use).

The name of the game in nonstick is skillets and frying pans. Applying a nonstick coating to any pan reduces its usable lifespan, but it especially doesn’t make sense to apply them to things like saucepans and stock pots — as many manufacturers do these days.
